Traditional Bakery in Halberstadt Files for Insolvency - Historic Halberstadt bakery files for insolvency amid shifting consumer trends

Halberstadt's historic bakery, renowned for its Domstollen fruitcake, has filed for insolvency. The company, which employs over 120 staff across more than 20 locations, cited financial strain as the reason for the move. A preliminary trustee has now been appointed to oversee the process.

The bakery, officially named Halberstädter Bäcker und Konditoren GmbH (HBK), has struggled with rising costs and changing consumer habits. Over the past five years, demand for traditional Christmas baked goods like the Halberstädter Domstollen has declined by around 5–10%. Industry reports from the ZDS (German Confectionery Industry Association) link this drop to higher prices, health-conscious trends, and a shift toward online shopping during the pandemic.

Despite the financial difficulties, the bakery will keep operating during restructuring. The process will be managed under self-administration, allowing the company to stabilise its finances while maintaining production. The Domstollen, a handcrafted fruitcake aged in the cellars of Halberstadt Cathedral, remains one of its most iconic products.

The insolvency filing marks a challenging period for the long-standing bakery. Operations will continue as usual while the company works to secure its future. The restructuring aims to address economic pressures and adapt to evolving market conditions.
